In dem Bem\u00fchen, alles aufzubrauchen, stie\u00dfen sie auf eine kleine Packung Mungbohnen, die schon seit Jahren in der Schublade lag. Da sie keine Lebensmittel verschwenden wollten, beschlossen sie, ein herzhaftes und schmackhaftes Mungobohnen-Curry zu kochen. Mit dem restlichen Gem\u00fcse, den Gew\u00fcrzen und der Br\u00fche aus dem K\u00fchlschrank und der Gew\u00fcrzschublade zauberten sie einen reichhaltigen und s\u00e4ttigenden Eintopf. Das Ergebnis war nicht nur ein leerer K\u00fchlschrank und eine leere Gew\u00fcrzschublade, sondern auch ein gut gef\u00fcllter Magen. Da das Curry mit der Zeit eindickt, sollten Sie beim Wiederaufw\u00e4rmen etwas Wasser hinzuf\u00fcgen. Passt perfekt zu frischem Reis oder <a href=\"https:\/\/lordsoftheplants.com\/de\/legendares-veganes-knoblauch-naan\/\" target=\"_blank\" rel=\"noopener\" title=\"Naan-Brot\">Naan-Brot<\/a>. Dieses Curry l\u00e4sst sich auch gut einfrieren. Au\u00dferdem werden viele Eint\u00f6pfe, so auch dieser, k\u00f6stlicher, je l\u00e4nger sie ziehen, damit sich die Aromen verbinden und die Gew\u00fcrze intensiver werden.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Das dauert eine ganze Weile, nicht wahr?<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Um dieses Gericht zuzubereiten, braucht man viel Zeit, vor allem f\u00fcr das Einweichen und Kochen der Mungobohnen, was 24 Stunden dauert. Das eigentliche Kochen erfordert ebenfalls viele Zutaten, aber alles geschieht in einem Topf, und die Gew\u00fcrze und Konserven m\u00fcssen nicht extra vorbereitet werden. Es erfordert etwas Zeit, deshalb ist es f\u00fcr mich eine Wochenendbesch\u00e4ftigung. Sie k\u00f6nnen dann eine gro\u00dfe Menge f\u00fcr die Vorbereitung von Mahlzeiten zubereiten und sie f\u00fcr die Woche im K\u00fchlschrank aufbewahren.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Welches Gem\u00fcse passt gut zu Mungobohnen?<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Eines der Dinge, die ich an Mungobohnen-Curry oder eigentlich an jedem Curry liebe, ist die Flexibilit\u00e4t, die es bietet. Man kann einfach jedes Gem\u00fcse verwenden, das man gerade zur Hand hat. Spinat, Gr\u00fcnkohl oder sogar Brokkoli eignen sich hervorragend und werden ohne gro\u00dfen Aufwand in das Curry eingekocht. Ich kann mir auch S\u00fc\u00dfkartoffeln oder K\u00fcrbis sehr gut vorstellen, die dem Curry eine gewisse S\u00fc\u00dfe verleihen und es herzhafter machen. Es ist die perfekte Art, Reste aus dem K\u00fchlschrank zu verwerten und das Gericht frisch und aufregend zu halten.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Gew\u00fcrze f\u00fcr Mungobohnen-Curry (und einfache Substitutionen)<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Dieses Curry enth\u00e4lt eine gute Handvoll Gew\u00fcrze, aber lassen Sie sich davon nicht abschrecken. Wenn Sie nicht alle Gew\u00fcrze zu Hause haben, k\u00f6nnen Sie stattdessen auch eine Curry-Madras-Gew\u00fcrzmischung verwenden, das ist eine tolle Abk\u00fcrzung. Trotzdem m\u00f6chte ich Sie ermutigen, mutig zu sein und zumindest einmal die vollst\u00e4ndige Mischung f\u00fcr dieses Rezept zu probieren. Ich wei\u00df, ich wei\u00df, eine lange Gew\u00fcrzliste kann \u00fcberw\u00e4ltigend sein, aber am Ende mischt man sie einfach zusammen. In dieser Mischung finden Sie Curry Madras, Fenchelsamen, schwarzen Sesam, Kurkuma, Chiliflocken, Kreuzk\u00fcmmel, Koriander, Nelken und ein wenig Zimt.
