Diese regionale Abwandlung ist kein kurioser Trend, sondern eine gesch\u00e4tzte Tradition, die das Brot besonders saftig und fluffig macht. Die Kartoffel sorgt daf\u00fcr, dass die Feuchtigkeit im Teig bleibt, was jede Scheibe wunderbar weich macht und ganz nebenbei verleiht sie dem Brot auch eine sch\u00f6ne, goldene Farbe.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Welche Mehle sind am besten geeignet?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><br>Aus meiner Erfahrung machen Hartweizengrie\u00df und Dinkelmehl in der Focaccia einen echten Unterschied. Durch das \u00d6l entsteht au\u00dfen eine perfekt knusprige Kruste, w\u00e4hrend das Innere sch\u00f6n weich und luftig bleibt. Au\u00dferdem sorgt es f\u00fcr die typischen Mulden im Teig, ideal um Kr\u00e4uter, Salz oder andere Toppings darin aufzunehmen. Und: Das Brot bleibt durch das Oliven\u00f6l auch l\u00e4nger frisch.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Was sind geeignete Toppings?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ehrlich gesagt, das ist ganz dir \u00fcberlassen und h\u00e4ngt von deinem Geschmack ab. Du kannst kreativ werden und verschiedene Varianten ausprobieren, zum Beispiel:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Rosmarin und Meersalz<\/li>\n\n\n\n<li>Oliven<\/li>\n\n\n\n<li>Kirschtomaten<\/li>\n\n\n\n<li>Knoblauch<\/li>\n\n\n\n<li>Zwiebeln<\/li>\n\n\n\n<li>Sonnengetrocknete Tomaten und frisches Basilikum<\/li>\n\n\n\n<li>Karamellisierte Schalotten und Balsamico-Glasur<\/li>\n\n\n\n<li>Artischockenherzen und Zitronenschalen<\/li>\n\n\n\n<li>Champignons und Thymian<\/li>\n\n\n\n<li>Spargel und Minze<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\">Wie lange sollte Focaccia-Teig gehen?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Idealerweise l\u00e4sst du den Focaccia-Teig bis zu 8 Stunden gehen, mindestens jedoch 1 bis 2 Stunden, je nachdem, wie viel Zeit du hast. Du kannst den Teig sogar bis zu 24 Stunden vor dem Backen vorbereiten. Eine gute M\u00f6glichkeit ist, ihn abends vorzubereiten und \u00fcber Nacht langsam im K\u00fchlschrank gehen zu lassen. Wichtig dabei: gut abdecken, damit der Teig nicht austrocknet. Ich empfehle eine erste Gehzeit von mindestens 1 Stunde und danach eine zweite, nachdem du den Teig in die Backform gebracht hast. Dann nochmal abdecken und weitere 30 bis 60 Minuten ruhen lassen, so wird die Focaccia sch\u00f6n fluffig. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Warum soll ich den Teig falten?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Die Falttechnik bei Focaccia sorgt f\u00fcr eine deutlich bessere Textur und mehr Geschmack. Zuerst l\u00e4sst du den Teig aufgehen, bis er sich ungef\u00e4hr verdoppelt hat, bei mir dauert das etwa eine Stunde, bevor ich mit dem Falten beginne. Danach ziehst du den Teig vorsichtig auseinander und faltest ihn in Dritteln \u00fcber sich selbst, um Schichten zu bilden. Nach jeder Faltung sollte der Teig kurz ruhen, bevor du den Vorgang wiederholst. Ideal ist es, das Falten etwa einmal pro Stunde \u00fcber mehrere Stunden zu machen, bei mir sind es meist rund 6 Stunden. Anschlie\u00dfend wird der Teig in die Backform gegeben. Diese Methode verleiht der Focaccia ihre typisch fluffige Struktur und eine sch\u00f6n ungleichm\u00e4\u00dfige Oberfl\u00e4che, die perfekt ist, um Oliven\u00f6l und Toppings
