Finely chop or press the garlic, slice the scallions into thin rings, and cut the tofu into roughly 1 cm thick sticks.
In a small bowl, combine the soy sauce, vinegar, and syrup or sugar. Give it a good stir and set the sauce aside for later.
While you’re preparing everything else, cook the peas according to the package instructions.
Heat some oil in a large pan and fry the tofu sticks on each side until they’re browned and crispy. Season them generously with salt while they’re cooking. Once they’re crispy throughout, take them out of the pan and cut them into small cubes.
Add the garlic to the same pan and fry for about a minute. Then add the crispy tofu cubes and leftover rice and mix everything together. Season with salt and pepper to taste.
With the heat still turned up, pour the sauce over the rice and stir everything vigorously. Keep tossing and stirring for a couple of minutes, making sure the sauce coats everything evenly and letting some of the rice develop those delicious roasted bits.
Turn off the heat and stir in the cooked peas and sliced scallions just before serving. Give everything one final mix, taste for seasoning, and enjoy!
