Outstanding Tomato Soup

Ingredients

  • 8 tomatoes
  • 3 onions
  • 8 garlic cloves
  • 2 tbsp tomato paste
  • 3 tbsp olive oil
  • salt & pepper to taste
  • 2 tbsp balsamic vinegar
  • 2 tbsp plant cream e.g.: oat, soy or almond

Instructions

  • Start by cutting the onions into a few pieces and adding the garlic cloves and olive oil. Roast them together in the oven at 180 degrees Celsius.
  • Next, dice the tomatoes and transfer them to a pot.

  • Begin to cook them over medium heat. Add the remaining ingredients, except the onions and garlic still roasting in the oven.

  • After cooking for 20 minutes add the roasted garlic and onions to the pot. Now let it all simmer for another 15 minutes.

  • Then, blend the soup using an immersion blender or a regular blender.
