Outstanding Tomato Soup
Tomato soup, so warm and bright

Ingredients

tomatoes

garlic cloves

tomato paste

tbsp
olive oil
salt & pepper
to taste

tbsp
balsamic vinegar
2
tbsp
plant cream
e.g.: oat, soy or almond
Instructions
Start by cutting the onions into a few pieces and adding the garlic cloves and olive oil. Roast them together in the oven at 180 degrees Celsius.
Next, dice the tomatoes and transfer them to a pot.
Begin to cook them over medium heat. Add the remaining ingredients, except the onions and garlic still roasting in the oven.
After cooking for 20 minutes add the roasted garlic and onions to the pot. Now let it all simmer for another 15 minutes.
Then, blend the soup using an immersion blender or a regular blender.
You are done! Enjoy your creamy, homemade soup!
