But at the end of the day, it mostly comes down to using good, flavourful tomatoes, some tomato purée for extra richness, slowly caramelising the garlic and onion and a little patience to let the flavours develop. Now here’s what you will need:

If I’m not using fresh tomatoes, I always reach for organic polpa – it has the richest flavour in my opinion. I can even get it in a big glass jar at my local supermarket, so keep an eye out for those. The quality of the tomatoes really matters here, because they’re the heart of this soup. The same goes for fresh vine tomatoes, they should look as if they’ve been sun-kissed. When you pick them up at the supermarket they should feel soft (in a good way), which usually means they’re ripe and ready to bring that full, sweet flavour we want in our soup.

Ingredients
- 8 tomatoes
- 3 onions
- 8 garlic cloves
- 2 tbsp tomato paste
- 3 tbsp olive oil
- salt & pepper to taste
- 2 tbsp balsamic vinegar
- 2 tbsp plant cream e.g.: oat, soy or almond
Instructions
- Start by cutting the onions into a few pieces and adding the garlic cloves and olive oil. Roast them together in the oven at 180 degrees Celsius.
- Next, dice the tomatoes and transfer them to a pot.

- Begin to cook them over medium heat. Add the remaining ingredients, except the onions and garlic still roasting in the oven.

- After cooking for 20 minutes add the roasted garlic and onions to the pot. Now let it all simmer for another 15 minutes.

- Then, blend the soup using an immersion blender or a regular blender.

- You are done! Enjoy your creamy, homemade soup!
