Best Vegan Bulgur Salad – so zesty, quick and refreshing
Ingredients
- 200 grams/ 1 cup bulgur or millet
- 1/2 cucumber
- 300 grams/ 1 3/4 cups tomatoes
- 4 Tbsp olive oil
- 1 lemon juice of it
- 1 handful mint
- 1 handful parsley
Instructions
- Cook the bulgur/millet according to package instructions.

- In the meantime, chop 1/2 cucumber into small pieces and dice the tomatoes into small pieces.
