For weeks, she had been preparing without telling anyone. She timed how long her mother usually took to get home from work. She tested different routes from school, cutting through alleys and hopping fences. When no one was home, she practiced, setting a timer, starting over if she missed it by even a minute.

Her mother’s big day was coming up, and she wanted the food to be ready the moment the door opened.

She left school and didn’t take the usual route home. Instead of the long street with the traffic lights, she cut through the small park, crossed the narrow footbridge and slipped behind the row of garages. It was faster. She had measured it.

She climbed in through the kitchen window, dropped her backpack, and checked the clock. Twenty minutes left.

Rice on first, then tofu cut into sticks with shaking hands. Cornstarch went everywhere, oil dripped on the kitchen floor. She stirred too fast, then slowed down. The tofu crisped and the sauce thickened. She has practiced for this very moment and would not miss a second.

At seventeen minutes, the tofu hit the glaze and turned glossy and sticky. At nineteen, she finished plating the rice. With half a minute left, she wiped her hands on her shirt and just stood there, staring at her finished meal.

The timer rang and at the same moment, the front door opened. Her mother stepped inside to a kitchen dusted in cornstarch, oil splatters on the wall, and a child standing proudly behind a bowl of sticky tofu and rice.

Twenty minutes exactly.

What can I serve with sticky tofu?

There are lots of different sides you can serve with sticky tofu besides rice or your favourite type of noodles. Something fresh and acidic works especially well, like a spicy radish salad or kimchi. If you want to add even more protein, steamed or roasted edamame with garlic and soy sauce are great options. My personal go-to are quick roasted sliced carrots and radishes with sesame oil and vegan oyster sauce for a bit of extra sweetness. Scallion pancakes or fried mushrooms work really well too, and a handful of freshly sliced spring onions on top ties everything together. Oh and some sesame seeds. Maybe black ones if you’re feeling fancy.

How do I keep tofu crispy after adding the sauce?

The easiest way to keeping tofu crispy after adding the sauce is to keep the crispy tofu and the sauce separate for as long as possible. Only toss the tofu in the sticky sauce right before serving, otherwise it will quickly turn soggy. Once the tofu hits the sauce, it’s at its best for about 5–10 minutes. Perfectly coated, still crispy, and nice and hot. After that it’s still tasty, but it will soften, cool down, and won’t reheat as well. So keep them separate until the very end and you’ll get the best crispy–saucy balance every time.

How can I meal prep sticky tofu or make it in advance?

If you want to prep this dish ahead of time, the best approach is to make a larger batch of the sauce in advance. Then just fry the tofu fresh when you’re ready to eat. Frying tofu sticks doesn’t take long, and if you’re cooking rice alongside it anyway, you’ll already need about 15–20 minutes. The sauce is even simpler than a classic teriyaki-style sauce, since this recipe skips garlic and ginger. If you end up with extra sauce, it works great in other stir-fries, noodle dishes, or even as a dipping sauce. So for efficient meal prep, make the sauce ahead of time and keep it in the fridge, then cook the tofu fresh. That way you keep everything crispy and might even shave a few minutes off those 20.

Can I bake sticky tofu instead of frying it?

You can bake sticky tofu instead of frying it, but it will take a bit longer and the texture will be slightly different. If you bake the tofu, I’d mostly season it with salt and add a bit of soy sauce and sesame oil so it doesn’t dry out completely in the oven. Baking tends to make tofu sticks drier than frying, but it’s a good option if you want to reduce the amount of oil you use. An air fryer works in a similar way and is a nice middle ground. The same rule applies here though: if you coat the tofu heavily in starch like you would for frying, it can end up with a dusty, dry surface. For baking or air frying, keep the tofu more moist instead and focus on seasoning rather than a thick starch coating.

How can I adjust the sauce to my taste?

If you want to tweak the sauce, there are lots of easy ways to adjust it to your taste. If you’re after a more classic teriyaki-style flavour, adding some minced garlic and ginger will make the sauce more intense. You can also make it spicy by stirring in gochugaru flakes or your favourite hot sauce while it’s cooking. Feel free to play around with the ratio of vinegar, syrup, and soy sauce. Adding more syrup and vinegar and a little less soy will give you a more sweet-sour taste, while being generous with the syrup makes it extra sticky. There’s a lot of room to experiment here, and it’s hard to go wrong.

Zutaten
  

  • 1 Block Tofu cut into thick stripes
  • 4 EL Maisstärke

Sauce

  • 3 EL Sojasoße
  • 2 EL Sugar/Syrup
  • 1 EL Weißweinessig or rice vinegar
  • 1 EL Maisstärke
  • ¾ Becher (70-80ml) Wasser

Optional

  • Radish, carrots, pepper, green beans…

Anleitung
 

  • Cut the tofu into thick sticks, roughly the thickness of your thumb.

  • Salt the tofu sticks, then roll them in cornstarch until all sides are coated. Gently tap off any excess starch and place them on a plate.

  • Heat a generous amount of oil in a pan over medium heat. Add the tofu sticks and fry patiently, turning them every 3–4 minutes so each side gets evenly golden and crispy. Don't turn the temperature too high.

  • While the tofu is frying, dissolve 1 tablespoon of starch in 2 tablespoons of water until completely smooth. Add the remaining water, soy sauce, vinegar, and syrup or sugar, and mix well.

  • Once the tofu is crispy, remove it from the pan and set it aside. At this point, you can fry some sliced vegetables in the same pan, or move straight on to making the sauce if you’re not adding any vegetables.
  • Pour the sauce into the hot pan and let it bubble gently until it thickens. If it becomes too thick, add a splash of water and stir until you like the consistency. If it’s too thin, dissolve another teaspoon of starch in a little water and stir it in. You can adjust sweetness if needed, then add the tofu back to the pan and cover it in the warm sauce. Serve immediately.
