There once lived a cheerful little frog named Emmanuelle who, after hopping from pond to pond, knew all too well the ache that settled deep in every frog's thighs after a long day. While rabbits could pause to stroll and ducks could simply decide to float, or even fly whenever they pleased, frogs had only one way of getting around... and that involved more hopping than any non frog could ever imagine. Besides the ever-present danger of thigh cramps, which has become somewhat endemic among the population, on most days, there was nothing a frog could long for more than a place to rest their tired legs.

So Emmanuelle decided to build exactly such a place. For many weeks, she worked from sunrise into the dead of night. She dug cool puddles and filled them with muddy rainwater. Between them she laid winding paths of soft moss and smooth mud that felt delightfully squishy beneath her frog feet. She planted a water lily garden where guests could drift their thoughts among the clouds while stretching their legs toward the sky. Her greatest masterpiece was a cozy sauna carved into the heart of a giant fallen tree. Soft, weathered bark lined the walls, and warm steam drifted lazily through every crack and crevice. She already pictured how frogs would emerge from its doorway glistening with tiny droplets, wearing a smile only a truly relaxed frog can wear.

When everything was finally finished, Emmanuel hung a wooden sign over the entrance that read:

It was the finest place any frog, toad, newt, turtle, or dragonfly had ever seen. Yet there was one final touch that soon had frogs, toads, and all sorts of curious pond visitors lining up outside before the spa even opened. Tucked beside the lily garden was a little refreshment bar where Emmanuelle herself served her famous green smoothie. Its bright green colour was just the right shade of frog, and the texture was just as divine. Thick, smooth, and wonderfully creamy, it reminded every frog of the very best mud, the kind that only appeared after the ground had soaked up all the fresh morning dew. Made with spinach and creamy avocado, the smoothie was an instant hit. Before long, it became just as famous as the spa itself, and plenty of visitors stopped by for a glass, whether they needed a soak or not.

  • Banana

I’ll let you in on a secret…

Lately, I genuinely can’t stop making this smoothie! I can be quite picky in the morning sometimes, but this is a breakfast I won’t ever say no to! Especially on warm summer days, when a heavy breakfast is the last thing I want, it’s absolutely perfect. It’s cool, naturally sweet, packed with healthy ingredients and to me, the easiest way to feel refreshed and energised for the day. But to be honest I would drink it every day, even if it wasn’t so… healthy! It’s just super delicious!

Do I need a High-Speed Blender?

Not at all! You can easily make this green smoothie with a regular blender or even a hand blender. If it isn’t very powerful, you may just need to add a little extra water to help everything blend smoothly. Cutting the avocado and other ingredients into smaller pieces beforehand also makes the process easier. The only ingredients that a less powerful blender might struggle with are seeds like flaxseeds or chia seeds. Instead of blending into the smoothie, they may stay mostly whole. For many people, though, that’s not a problem, as they still add texture and nutritional benefits.

Can I taste the spinach?

It really depends on bow much you add! If you add only a little, it tastes more like a creamy banana and apple smoothie than a veggie drink. Personally, I love that gorgeous green colour, so I stuff an extra handful of spinach into my blender to make it even more vibrant. Feel free to adjust the amount to your liking though, the recipe is very flexible. Oh and in my opinion fresh mint or basil adds a refreshing note and takes this healthy smoothie to the next level!

Tips for this refreshing Green Smoothie?

Here’s a list of tips that you might find useful…

  • For an extra chilled smoothie, freeze the banana beforehand. (You can skip the ice cubes if you do!)
  • Use apples such as Gala or Pink Lady for a sweeter flavour or choose a variety like Topaz or Granny Smith if you like some acidity.
  • Mint gives the smoothie a cool, refreshing taste, while basil adds a uniquely aromatic flavour. But using both is a delicious combination and is my personal favourite.
  • If you prefer a thinner consistency, simply add a little more water. That way the smoothie goes more in the direction of a green juice!

How to store this Green Smoothie?

This smoothie is best enjoyed fresh, but if you have leftovers, store them in an airtight jar in the fridge for up to 24 hours. Give it a good shake or stir before drinking, as natural separation will probably happen after some time occur. Don’t worry if the bright green colour starts to fade, that’s completely normal and happens due to oxidation. I haven’t tried, but if you add more lemon juice that oxidation might be able to get delayed a little. The flavour may also change slightly over time, but it’ll still be delicious.

What variations go well with this recipe?

  • Add a tablespoon of chia seeds or ground flaxseed.
  • Blend in a small piece of fresh ginger.
  • Swap the water for coconut water.
  • Add a scoop of your favourite vanilla protein powder if you want some gains.
  • Toss in a peeled kiwi if you want it even… fruitier.

How to Make a Healthy and Refreshing Vegan Green Smoothie

Ingredients
  

  • 100 ml/ ⅓ cup+ 1tbsp Water
  • ½ Avocado
  • 1 Medium Banana optionally frozen
  • ½ Medium Apple
  • 5-8 Fresh Mint and/or Basil Leaves
  • 1-2 tbsp Lemon Juice
  • A few Ice Cubes optional
  • 1 Handful of fresh Spinach

Instructions
 

  • Slice the avocado, banana and apples.

  • Add all the ingredients to a blender and blend until completely smooth and creamy. Taste and adjust to your preference by adding more lemon juice or a little more water for a thinner consistency.
  • Pour into a glass and enjoy immediately.
