Main ingredients for this tomato soup
I’ve made a lot of tomato soups over the years and I’ve learned it doesn’t take a long list to get great flavour. As a kid, I always thought tomato soup must be tricky to make – it tasted so incredibly good whenever I ordered it at a restaurant after all. But at the end of the day, it mostly comes down to using good, flavourful tomatoes, some tomato purée for extra richness, slowly caramelising the garlic and onion and a little patience to let the flavours develop. Now here’s what you will need:
- Tomatoes
- Tomato puree
- Cream (I used soy cream)
- Olive oil
- Onions
- Garlic
- Veggie Stock
- Balsamic Vinegar
- Fresh Basil (optional)
- Chickpeas (if made as a main dish)

How do you make tomato soup creamy without using dairy?
It’s quite simple! First, blend in plant cream like almond, cashew, oat, or soy for a rich texture. Additionally, plant milks are always a great option. If you don’t have these on hand, try using a cooked potato instead. These alternatives will give your tomato soup a delicious, creamy consistency! You can also experiment with adding nutritional yeast for a subtle, cheesy flavour.
Can I use canned tomatoes instead of fresh ones?
Absolutely! You can easily make delicious tomato soup with canned tomatoes instead of fresh ones. In fact, canned tomatoes are often preferred for their convenience and consistent flavour. Moreover, they are picked and canned at peak ripeness, ensuring a rich taste year-round. Additionally, using canned tomatoes cuts down on prep time, as they are already peeled and chopped.
The Tomatoes Make the Soup
If I’m not using fresh tomatoes, I always reach for a good quality polpa or canned whole peeled tomatoes – they usually have the richest flavour in my opinion. I can even get it in a big glass jar at my local supermarket, so keep an eye out for those. The quality of the tomatoes really matters here, because they’re the heart of this soup. Different brands and qualities will taste different, just explore until you find your favourite type! The same goes for fresh vine tomatoes, they should look as if they’ve been sun-kissed. When you pick them up at the supermarket they should feel soft (in a good way), which usually means they’re ripe and ready to bring that full, sweet flavour we want in our soup.
What kind of protein could I add?
Easy! I love making crispy chickpeas to use as croutons for this tomato soup. I find their texture really pleasant, and they add a lovely contrast to a dish. They’re also incredibly convenient to make, you can simply pop them in the oven alongside the onions and garlic while you’re prepping the rest of your meal. They’ll crisp up beautifully! Just toss them with your favourite spice mix and some (olive) oil. I especially like using a gyros seasoning, or keeping it simple with paprika, salt and pepper. You could also add white or butter beans, or blend them into the soup, although beware, the latter will change the flavour profile. If you have some silken tofu, use that instead of plant cream/milk to make the soup even more protein-packed!

What are some good topping options?
Enhancing your tomato soup with the right vegan toppings can elevate its flavour and texture. First, try adding a sprinkle of fresh basil or parsley for a burst of colour and freshness. Additionally, a swirl of olive oil or soy cream can add a rich, creamy texture. For a bit of crunch, top your soup with homemade croutons or toasted nuts. Nutritional yeast offers a cheesy flavour without the dairy. Moreover, a drizzle of balsamic vinegar or a pinch of red pepper flakes can introduce a delightful depth of flavour. Feel free to experiment with these!
How to pair your tomato soup
I’ve got some great ideas for you! First off, you can’t go wrong with a slice of crusty bread or a warm baguette – they’re classic for a reason. A fresh garden salad with a light vinaigrette is another great choice, complementing the soup’s rich flavours. If you’re after something a bit heartier, avocado toast is always a winner. Roasted vegetables also make a fantastic side. Bruschetta is another excellent option.
